Every powder reconstitution event follows four sequential stages. Understanding which stage limits dispersibility allows you to choose the right ingredient grade and optimize your formulation.
Sunflower lecithin (E322) acts at WSDD stages 1 and 3 simultaneously — the two most critical stages for visible quality. Its phosphatidylcholine head group is strongly hydrophilic; its fatty acid tails are hydrophobic. When present on a powder particle surface, lecithin molecules orient with heads toward water and tails toward the particle, creating a monolayer that:
Temperature affects all four WSDD stages simultaneously. Every 10°C increase in temperature: reduces water surface tension by ~1.5 mN/m (improves wetting), decreases viscosity by ~20% (improves sinking), increases molecular kinetic energy by ~3.4% (improves dispersing), and increases diffusion coefficient by ~7% (improves dissolving).
The practical implication: products designed for cold water reconstitution (sport shakers, energy drinks, cold beverages) require instant-grade ingredients. Products designed for hot water reconstitution (instant soup, hot cocoa, coffee creamer) can use standard-grade ingredients at lower cost — the hot water compensates for lower instant quality.

Agglomerated instant proteins (100–150 μm) disperse better than fine cocoa powder (18 μm) because the agglomerate structure improves wetting and sinking, while cocoa powder's hydrophobic fat coating resists wetting despite its tiny particle size.
